A century ago Australia was home to 10 billion rabbits, thriving in their adopted home. Storyteller Bruce Munday finds the rabbit saga irresistible, and has collected it into his new book,\u00a0<\/em><a href=\"http:\/\/www.wakefieldpress.com.au\/product.php?productid=1363&amp;cat=0&amp;page=1\">Those Wild Rabbits<\/a><em>. The book features\u00a0this excerpt from the <\/em>Age<em> in 1925, including a recipe for baked rabbit with apple sauce.<\/em><\/p>\n<h4 class=\"p1\"><\/h4>\n<h4 class=\"p1\">Rabbit, the Cheapest White Meat<\/h4>\n<p class=\"p1\">Visitors from England often express surprise that rabbits, which are a delicacy\u00a0in Europe, are often despised here. They are the cheapest of the white meats\u00a0with us, and if properly prepared, yield to none, in delicacy of flavor. White\u00a0meats are both more digestible and freer from those deleterious substances\u00a0which in beef and mutton contribute to the rise of blood pressure and all its\u00a0attendant evils. During the winter months first-quality rabbits are difficult to\u00a0obtain, but the young spring ones are just coming on to the market now, and\u00a0lend themselves to varieties of tasty cooking. Part of the unpopularity of rabbit\u00a0here is probably due to the fact that methods of preparation are stereotyped,\u00a0but the following recipes will give dishes which are both economical and\u00a0appetising.<\/p>\n<h4 class=\"p1\">Baked Rabbit with Apple Sauce<\/h4>\n<p class=\"p1\">Before cooking always soak the rabbit in salt and water for 30 minutes.<\/p>\n<p class=\"p1\">Take a moderate sized rabbit and spread over it slices of carrot, onions, lemon\u00a0and bacon. Sprinkle with salt, pepper, mixed spices and a few cloves, enclose\u00a0in greased paper and cook in a hot oven. Make the sauce from six apples, the\u00a0juice and grated rind of an orange, sugar and a little water. Pour the sauce\u00a0over the rabbit and serve hot as possible.
