Jeni and Burt Surmon&#8217;s tale of leaving\u00a0their city life to start a winery includes a number of delicious recipes, a few which of course incorporate some of their Mt Surmon wines! These beef cheeks sound like exactly the thing for an Autumn Sunday lunch.<\/em><\/p>\n<p>&nbsp;<\/p>\n<h4 class=\"p1\">Beef (calf) cheeks in red wine<\/h4>\n<h5 class=\"p1\">Ingredients for 4 servings<\/h5>\n<p>&nbsp;<\/p>\n<p class=\"p1\"><i>4 beef cheeks<\/i><\/p>\n<p class=\"p1\"><i>150 mL olive oil<\/i><\/p>\n<p class=\"p1\"><i>1 x 400 g tin of tomatoes<\/i><\/p>\n<p class=\"p1\"><i>2 tbs tomato paste<\/i><\/p>\n<p class=\"p1\"><i>1 onion, chopped<\/i><\/p>\n<p class=\"p1\"><i>1 red capsicum, chopped<\/i><\/p>\n<p class=\"p1\"><i>2 sticks celery, chopped<\/i><\/p>\n<p class=\"p1\"><i>5 cloves garlic, chopped<\/i><\/p>\n<p class=\"p1\"><i>handful of parsley, chopped<\/i><\/p>\n<p class=\"p1\"><i>2 springs of sage, chopped<\/i><\/p>\n<p class=\"p1\"><i>2 sprigs of rosemary, chopped<\/i><\/p>\n<p class=\"p1\"><i>4 sprigs of thyme, chopped<\/i><\/p>\n<p class=\"p1\"><i>salt, pepper, grated nutmeg<\/i><\/p>\n<p class=\"p1\"><i>250 mL beef stock<\/i><\/p>\n<p class=\"p1\"><i>half a bottle of Nebbiolo (Mt Surmon or otherwise!)<\/i><\/p>\n<p class=\"p1\">Wash the cheeks well. Put half of the oil into a large saucepan and\u00a0saut\u00e9 the cheeks until brown on both sides. Remove the cheeks.<\/p>\n<p class=\"p1\">Add the remaining oil, vegetables, tinned tomatoes and tomato paste\u00a0to the pot, cook for a few minutes then add the garlic, spices and\u00a0herbs, and cook for 10 minutes, stirring occasionally to stop from\u00a0sticking, in which case add a little stock.<\/p>\n<p class=\"p1\">Now add the cheeks, stock and red wine.
