Set aside for\u00a05 minutes, before rinsing well with water and patting dry\u00a0with kitchen paper.<\/span><\/p>\n<p class=\"p1\" style=\"text-align: justify;\"><span style=\"color: #333333;\">Heat oil in a large heavy-based frying pan over\u00a0medium heat. Add eggplant in batches, cooking until soft\u00a0and golden. Place cooked eggplant on a plate covered\u00a0in kitchen paper to drain before setting aside in a large\u00a0mixing bowl.<\/span><\/p>\n<p class=\"p1\" style=\"text-align: justify;\"><span style=\"color: #333333;\">Add the halved tomatoes, shallots and chillies to the\u00a0cooked eggplant, tossing to combine.\u00a0Combine herbs and fried shallots in a separate small\u00a0mixing bowl.<\/span><\/p>\n<p class=\"p1\" style=\"text-align: justify;\"><span style=\"color: #333333;\">For the dressing, mix all the ingredients together in a\u00a0small mixing bowl. Pour dressing over the eggplant and\u00a0tomatoes, tossing to combine.<\/span><\/p>\n<p class=\"p1\" style=\"text-align: justify;\"><span style=\"color: #333333;\">For the garfish, heat a barbecue to high or place a\u00a0chargrill pan or heavy-based frying pan over high heat.\u00a0Brush garfish with oil and season with salt and pepper.\u00a0Place fillets skin down on preheated barbecue and cook\u00a0for 1\u20132 minutes. Carefully turn the fish and cook for\u00a030 seconds, then remove immediately.<\/span><\/p>\n<p class=\"p1\" style=\"text-align: justify;\"><span style=\"color: #333333;\">To serve, place cooked garfish on a platter.
